This can be tricky as you're getting the hang of blocking, but once you learn the movement patterns of common enemies, and you get weapons that are strong enough to only allow enemies to attempt 1-2 attacks before the battle is over, this will come naturally. There will be battles where the enemy only attacks 1 time before you finish them off, which means you only need 1 successful block to meet the requirement.
