THIS IS MY ACHIEVEMENT SOLUTION:

The really fast way of doing this with a boosting buddy or 2nd box (for those of you who have one)
A note first: RANKED matches will have you race against 20 other AI MOTO's but TOURNAMENTS will only pit you against whomever is in the tournement no AI MOTO's will appear.

There is a small catch and I'll explain that a bit later.

This is for 2 boosters. (any more will take extra time and could lead to messing up the quit out meathod)

Start the game: Go to X-box Live
Choose; Ranked Match
Choose: Online Tounament (any one will do and if you need the tournament wins then will net you those as well)

With a buddy:
Create a tournament. (any will do, if you need the tournament wins just do this but pick a new tournament everytime!)

Start the match and wait for the race to begin, this is important as you need to have the race start and the person going for the win to pull out into the lead. You don't have to make a lap but you should get a pretty good lead at least the first time, when you've done a few more you can shorten the lead significantly

When the other player quits out the winner will get a message on his screen that says the other player has quit. The winner then has to hit the A button to end the match as fast as possible,, I can't stress this enough or you risk not getting credit for the win.

Remember that catch I was talking about.. here it is:
When the looser quits out this sets into motion two events

1. AI will immediatly take over the quiter and it will try to out run the winner. (strange I know)

2. The winner will be reading the message that the other person quit out.. his/her game will be paused but the match will continue...see #1. If the AI MOTO passes the winner (whom is paused) the game will now give winning status to the AI MOTO, (not to be confused with the actual gamer whom will also not get credit for the win)

The winner will recieve credit for completing the the Race the quiter will not.
