Digging deeper into the PAX South schedule, it's looking a little weak...

For those of you familiar with San Antonio, what should me and my friend do? (We won't have a car though).

Any suggestions of great non-chain restaurants to hit?

As a local San Antonian, I would recommend the River Walk (which is right next to the Alamo). There's a tons of restaurants there, pretty much any chain can be found there, some local places but none of those are anything special, Paisanos seems to be the most popular one of those (Italian). Good local restaurants near downtown, that's a little harder. My wife and I like PIco de Gallo which is on the opposite side of downtown. Mi Tierra is also good, again opposite side of downtown from the convention center. Pretty much the only Mexican restaurants that I would visit again, that I've gone to in the US. There's also the Tower of the Americas, which we still haven't visited in the 4+ years of living here.

It's pretty hard to do anything around San Antonio without a car. Checkout Game Over Video Games, though not originally from here (Austin) their two stores here do carry lots of nostalgia filled video game items. San Antonio also has other missions besides the Alamo, and those are much prettier. Restaurants not downtown; Longhorn Cafe, Bigz Burger Joint, Cheesy Jane's, Chester's and Chunky's are great local burger joints (in that order, for my taste).

Seriously, the only thing other than the Alamo I have ever heard mentioned is that the Riverwalk would be OK in most major cities, and that the AlamoDome is awful.

When did the Republic of Texas start exporting these? I know a few years back it was a big deal that New Mexico and Oklahoma got franchises since they were a Texas thing.

FYI: Whataburger started in Corpus Christi, but they are headquartered here in San Antonio, so technically they are local.

A long time ago. Louisiana had a Whataburger in Baton Rouge when I was in my teens. And Metairie (part of New Orleans) had one for a short time, but, restaurants like that struggle in New Orleans. If you aren't a giant chain with resources to really back yourself, you cannot compete against all the local cuisine.
